Veggie Risotto: 

For 9 to 12 months old children

Ingredients:

1 tbsp oil

1/2 long grain rice

1 cup diluted vegetable stock

1 cup of chopped vegetables (eggplant, peas, squash and mushrooms)

1/2 cup cheddar cheese

1/2 bread crumbs

1 tbsp butter

1/2 cup breast milk or formula

 

Preparation:

Heat the oil in a fry pan.

Add the rice and stir for 1 minute.

Add the vegetable stock, cover and let simmer for 10 minutes.

Mix the vegetables with breast milk or formula.

Add vegetables and milk to the rice, stir and let simmer for 5 minutes.

Remove the mixture from heat and place in an oven-proof dish.

Top the mixture with cheddar cheese.

Rub the butter into the bread crumbs and sprinkle over the top.

Bake in the oven at 200 degrees heat for 10 minutes or until lightly golden.

Let it cool down and serve.
